For Thanksgiving, I decided to make a gingerbread cheesecake.
Okay, no. I decided I just wanted to eat some gingerbread cheesecake then pretended it was for Thanksgiving.
I got the recipe from here and I like it.
The first bite has a touch of pumpkin spice to it to the point it almost reminds me of pumpkin cheesecake. But then the molasses hits and there’s the gingerbread flavor.
If you want to try something different this year, or for December, give this a try.
But don’t do like I did and realize you forgot one of the packages of cream cheese after you pour the mixture into the crust. D’oh!
